Zucchini Omelette
Ingredients:
1 egg
Grated zucchini
Pinch of Himalayan rock salt
Grate half a zucchini. Use your hands to squeeze the juice out of the grated zucchini. Place the zucchini into a bowl, and add an egg & salt. Mix together. Once combined, place into a pan over medium heat. Once one side is cooked, flip it over and cook the other side.
Serve onto plate and top with some sliced avocado and cherry tomatoes.
* Options: Could also sprinkle with some feta cheese, mushrooms & sun-dried tomatoes.
