Breakfast Oat Pancake
Ingredients:
1/2 cup traditional oats
1 egg
Pinch Himalayan rock salt
1/2 tsp cinnamon
1 tbsp chia seed
1/2 cup almond milk (or milk of choice)
* if you want to thicken the mixture, use a bit of almond meal or choice of flour
Place oats, cinnamon, chia seed, & salt into small bowl. Add almond milk (you want enough almond milk to cover the dry ingredients; use more milk if necessary). Mix together and let it sit for a couple minutes so the oats and chia seed soak up the milk a bit. Add an egg to the mixture & with a fork, mix together. Add flour and mix again. If the mixture is too dry, add some more almond milk until it reaches desired consistency.
Place a fry pan over medium heat & oil/grease pan. When pan is hot, pour in mixture. While the pancake mixture is cooking, slice up a banana and place it on top of pancake while it’s cooking (or I sometimes use frozen berries instead of banana – also delicious!).
When ready, flip the pancake & the banana will cook into it (it caramelizes the banana).
Once pancake is cooked, turn off the heat. Place pancake on plate and top with your choice of toppings. Coconut yoghurt, coconut flakes & berries is my favourite!
