Raw Chocolate Fudge Brownie

Ingredients:

BASE

2 cups walnuts
1 cup cashews
1 cup medjool dates
1/2 cup cacao powder

 

ICING

1 cup medjool dates
1/4 cup coconut oil
3 drops of vanilla stevia (optional)
Pinch of himalayan salt
1/2 cup cacao powder
1 tbsp maple syrup (chosen sweetener)
1/2 cup water

 

For the base: Mix walnuts and cashews together in thermomix or food processor until they look like breadcrumbs.  Add remaining ingredients and blend until well mixed and mixture begins to stick.  Press mixture into slice tray (lined with baking paper).

For the icing: In high powered blender or thermomix (I prefer high powered blender), mix all ingredients until smooth.  Add more water if it’s too thick.  Spread icing over base and place in freezer for at least 30 minutes before serving.  Can eat straight from the fridge or freezer.
