Lemon and Coconut Bliss Balls

Ingredients:

1 cup almonds
1 1/2 cups raw cashews
1 cup desiccated coconut (plus extra for rolling)
2 teaspoons coconut oil
Juice of 2 lemons
Zest of 1 lemon
1 dessertspoon honey (or sweetener of choice)
Pinch of Himalayan rock salt

Blitz almonds and cashews in thermomix or food processor.

Add all remaining ingredients and blend until desired consistency.

Roll balls mixture into balls and then coat in desiccated coconut.

Store bliss balls in fridge or freezer.
