Apricot Bliss Balls

1 cup raw cashews
1 desiccated coconut (plus extra for rolling)
1 cup raw almonds
1 1/2 cups dried apricots
1 tablespoon honey (or sweetener of choice)
1 dessertspoon coconut oil
Pinch of Himalayan rock salt

In thermomix or food processor, blitz dried apricots until they’re finely chopped up (or to how ever chunky you’d like them).

Remove apricots from thermomix or food processor and place aside.  Blitz almonds and cashews until they look like bread crumbs.  Add apricots, desiccated coconut, honey and salt.  Blitz again until mixture is all combined.

Roll mixture into balls and then coat in desiccated coconut.

Store bliss balls in fridge or freezer.
